How do you like your eggs in the morning?

I’ve seen a lot of egg recipes lately and after visiting the farm shop and buying some lovely fresh eggs, I thought what would be better than to make something different for breakfast. I didn’t fancy the usual scrambled or fried eggs and I wanted to use up some of the ingredients in my kitchen larder!

So on Saturday and Sunday I tried two different breakfast egg recipes…one which I saw on the Little Paris Kitchen, Rachel Khoo’s BBC2 programme and another of hers that I adapted quite a bit!

The Rachel Khoo Recipe can be found here. It’s aptly named eggs in pots and is quick to prepare!

Simply grab a ramekin and spoon some crème fraiche into it.


Then you season the crème fraîche with salt, pepper and a pinch of nutmeg.


Crack an egg on top and add more seasoning if you wish


Place the ramekins in a baking dish and pour enough lukewarm water into the dish to come halfway up the sides of the ramekins. The Rachel Khoo recipe says this should cook in 15 minutes, but mine took a lot longer more like 30 minutes! Maybe I hadn’t filled the water up enough in the pan or my oven wasn’t hot enough…I guess the trick here is to keep an eye on it and keep checking and you will know for next time as everyone’s oven is different!


After about 40 minutes this is how mine came can still see the egg white is slightly undercooked so I left it in for a little while longer..


…before breaking into the yolk! I was by this time very impatient, very hungry and not wanting the egg yolk to harden! I love that runny yolk it just looks and tastes wonderful doesn’t it?!


The recipe says that you can add some fish roe or dill to the top before serving, however I had neither of these so simply guzzled the pot down with some soldiers!

It was a unique taste, the nutmeg flavour definitely comes through and the crème fraiche makes the whole thing taste much fresher but I have to say I won’t be swapping this for my poached eggs anytime soon.

Definitely worth a try though!
