Cheeky filo parcels

Veggie or not, you are bound to love these little savoury filled filo parcels!

Ingredients:
1 tin beans/pulses of your choice (chickpeas/butterbeans etc)
100g feta cheese
A few handfuls of spinach
1 lemon
paprika
filo pastry

You will need a blender for this recipe!

Method:
Empty your can of beans (I used butterbeans) into the blender with the feta, spinach, lemon zest and a little juice and paprika and blitz it all up!

Grab a sheet of filo pastry and fold in half, then put a blob of the mixtures into the centre and bring the sides up to loosely make a little parcel. Do this with another 3 bits of pastry or however many you would like to make.

Put some oil in a pan and fry for a few minutes so that the bottom crisps up, then you can bake in the oven until the parcels are lovely, golden and crisp!

I used a recipe from Jamie Oliver’s 15 minute meals and adapted it to what I had in the kitchen cupboard.

He also suggests serving this with some natural yoghurt and a drizzle of runny honey, which really do complement the pastry flavour.

It’s a great little vegetarian snack and makes a wonderful light lunch, you could even try smaller versions to have as canapes perhaps.
