Salsa Verde a la Pizza Pilgrims

My lovely friend got me the new Pizza Pilgrims recipe book and I have been admiring the recipes lovingly, my mouth watering every time I turned the page!

I’m going to share their salsa verde recipe although feel free to add your own little twist on it – perhaps a nice chilli kick!

It really is pretty simple, just a lot of chopping things up and mixing – who knew something so simple could taste so good!

Ingredients
Handful of parsley
Handful of basil
Anchovy fillets
Tablespoon of capers
Pitted green olives
Garlic cloves – recipe says 1 but i added afew more as I love garlic!
Salt and pepper
Olive oil
Juice of 1 lemon

Method
Firstly finely chop your herbs, anchovies, capers and olives and put these into a large bowl.

Then crush the garlic and add this with some salt and pepper to the bowl.

You can then add a good few glugs of olive oil to the bowl to loosen the mixture .

Add your lemon juice to the bowl to give the mix a sharp kick and you are done!

This is a great thing to keep in the fridge and can be put on roasts, sandwiches and even gnocchi (which is what I did). The mix can last for up to 2 weeks if kept in a sterilised jar, although its so moreish that I licked my bowl clean on day 1!
