Courgette ‘spaghetti’

Some of my friends are currently on the Paleo diet – going back to eating like a caveman and having food that is all natural… They have all raved about ‘courgette spaghetti’ so I thought I’d give it a try too!

Now if you know me, you will know that I love quick and easy recipes and this is extremely simple! All you need is a julienne peeler (they are very cheap from eBay) and some courgettes.

Simply peel long strips of the courgette with the peeler and you get courgette spaghetti/noodle strands that are ready to cook.

I normally heat a pan with a little garlic oil as I love garlic on everything but you can use normal oil or even chilli oil for a kick! Then simply add your courgette strands and fry for 5 minutes seasoning with salt and pepper.

You can ads spices too if you want, I’ve tried this with a bit of ginger and cayenne pepper for a little twist but just add what you fancy!

So far I have had this as an alternative to pasta with bolognaise sauce (and of course a grating of parmesan), acting as noodles with a turkey escalope and also mixed with wholegrain mustard and creme fraiche and some smoked mackerel…the list of meals you can make is endless so try it for yourself and let me know what you make!
